Vanilla is a variety of orchid that grows exclusively in tropical areas.
It is the second most precious spice after saffron, because of the long processing that its cultivation has: at least 5 years from the first sowing to extraction. Since there are no natural pollinators such as bees or birds, vanilla beans are hand-pollinated by the growers. The best pods are taken unripe from the plant.
After being immersed in hot water to reduce their vitality, they are left to dry in the sun. Thanks to the process of natural fermentation, vanilla takes on its typical brown color.
